Another student asked if I would write the muffin recipe down for him. He changed his mind and suggested I just post it to my website tonight! Ha! So, here's the recipe, my friend!
Pumpkin Muffins
1 box Duncan Heinz Spice Cake Mix
1 can pure pumpkin
mini chocolate chips (optional)
​Directions: Mix dry cake mix and can of pumpkin in mixing bowl until moist. Divide batter into 12 muffin cups and sprinkle with mini chocolate chips, if using. Bake at 350 degrees for 20 minutes. Let the muffins cool in the pan for a few minutes before removing to a cooling rack. No need to grease the muffin cups or use liners. These muffins are very moist and pop right out of the pan! I also make these muffins with Devil's Food cake mix and the pumpkin puree and they are scrumptious! Enjoy!
